Cinco de Mayo is just around the corner and Mexican food is one of my all-time favorite things!! I have been planning my quarantine-celebration meal for weeks. One of my favorite local restaurants serves up the best authentic Mexican food I have ever had, I have dreams about their street corn! Sadly, corn is not quite in season at local markets so I decided to whip up some street corn off the cob! This recipe is so quick, so easy and makes a great addition to any Mexican style dish!
The trick to making this dish really pop is to get a nice char on that corn. Traditionally, you would throw a whole corn cob on the grill to get those nice black char marks. Since corn is not in season at the moment, I took canned corn (frozen corn will only work if you thaw it first) and squeezed as much moisture as possible out of it. This way it will actually char. Then you throw the corn in a scorching hot cast iron pan and cook it with some olive oil for about 8 minutes. This will give the outside of the corn some texture and caramelize the natural sugars in the corn for an amazing flavor! Once summer hits, I promise I will post a more traditional street corn recipe!
Once you take the corn off the heat, you mix it with mayonnaise, Mexican chili powder, cumin and a touch of lime juice for the perfect side to pair with any of your favorite Mexican dishes.

Street Corn off the Cob
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Yield: 4 Servings
Ingredients
1 can of Corn
1 tbsp Real Mayonnaise
1 tsp Mexican Chili Powder
1 tsp Cumin
1 tsp Lime Juice
Cojita Cheese (to sprinkle on top)
Salt & Pepper to taste
Instructions
Heat a cast iron skilled on high heat until it begins to smoke. Drain corn and squeeze out as much of the moisture as possible. Turn the heat down to medium high, coat pan with olive oil and cook corn, stirring occasionally, for 10-15 minutes until charred. Season with salt & pepper.
In a small bowl mix cooked corn, mayonnaise, chili powder, cumin and lime juice.
Top with Cojita cheese and enjoy!
