Pepper Bacon with Maple Mustard

This appetizer is perfect for impressing your friends without breaking your back in the kitchen all day. Pepper Bacon is one of the easiest snacks to make and it will be gone within minutes! Extra thick cut bacon coated in brown sugar and black pepper dipped in a rosemary maple mustard takes this bacon to a whole new world!


In America, it is a crime not to like bacon! What could be better? Salty delicious pork with just the right amount of crunch. Well, we have found a way to make bacon better! A mixture of black pepper and brown sugar creates the rub for the exterior of this bacon. This recipe comes together in minutes and makes the perfect appetizer before a meal or Hors D'oeurve at a party!


With an appetizer this simple, it is crucial to use high quality bacon. Splurge on some slab cut bacon from the butcher and make sure it is nice and thick! A 1/2 inch cut gives the best result.

Pepper Bacon with Maple Mustard

Prep Time: 5 Minutes

Cook Time: 30-45 Minutes

Yield: 4 Servings

Ingredients


For the Bacon:

  • 1 lb Thick Cut Bacon

  • 1/4 cup Maple Syrup

  • 1/2 cup Dark Brown Sugar

  • 1/2 cup Coarse Ground Black Pepper

For the Maple Mustard:

  • 1/4 cup Whole Grain Mustard

  • 1/4 cup Maple Syrup

  • Salt & Pepper to Taste

  • 1 clove Garlic Minced

  • 1 tsp Rosemary Chopped


Instructions


Preheat oven to 375 degrees.


Lay the bacon on a wire rack over a sheet pan, do not let the strips of bacon touch. Brush bacon with maple syrup on both sides, be generous. Mix together brown sugar and black pepper in a small bowl. Sprinkle rub generously on both sides of bacon.


Bake for 15 minutes then flip and repeat the process until the fat has rendered from the bacon and it is nice and firm. For 1/2 inch cut bacon this will take roughly 35 minutes. The thinner the bacon, the less time it will take to cook.


While the bacon cooks, make the sauce by whisking all ingredients together in a small bowl. Serve bacon with sauce on the side. For a dramatic presentation you can purchase a clothesline bacon holder from amazon!

Cooks Note:

Use the best bacon you can find! I always go to our local butcher and get slab bacon cut 1/2 inch thick. If you use grocery store bacon the recipe will turn out fine; however, you won't get the same transformation!
