If you are a fellow Mexican Food lover, you know that Cinco de Mayo is just around the corner! This is the perfect excuse to drink way too much tequila and eat some delicious Mexican food! Sadly, this year we cannot celebrate at our favorite Mexican restaurant, so I have been hard at work creating copy-cat recipes of some of my favorites!
The trick for this meal is NOT TO DRAIN THE BEANS! This is super important because the liquid in the can will reduce to create that restaurant style black bean.
Mexican Style Black Beans
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Yield: 6 Servings
Ingredients
1 White Onion
2 cans Black Beans
2 tsp Cumin
Salt & Pepper to Taste
Cojita Cheese
Instructions
Dice white onion and cook on medium high heat in a sauce pan until translucent. Season with salt, pepper and cumin. Add in two cans of black beans (do not drain) and cook on medium heat for 15-20 minutes until the liquid has reduced. Serve topped with cojita cheese!
