Chipotle Bacon Grilled Cheese

Ooey, gooey, salty, crunchy....is your mouth watering yet? Mine is! These are the best grilled cheeses. With a homemade chipotle mayo, crispy bacon and a mix of cheeses they could not be more perfect!


Every summer there is a farmers market a few towns over from where I live. My sister and I go every week and always enjoy a grilled cheese from one of our favorite food trucks! This recipe is inspired by those wonderful Sunday morning's at the farmers market.


Chipotle mayo is a great condiment to jazz up any sandwich, for mine I use real mayonnaise and chipotle paste that you can purchase on Amazon. You can also use chipotle peppers in adobo that are sold at any supermarket in the Mexican isle! If you are using chipotle peppers make sure to only use the adobo sauce, the peppers themselves are very spicy.


For mine, I used Tuscan white bread from the grocery store bakery. You can use any kind of bread, but I recommend one with a nice crust and not too thick. This way the bread won't overwhelm the grilled cheese. Make sure when you assemble your sandwich you slather a healthy amount of butter on the outside of the bread. This will give you that gorgeous golden brown color and a nice crunch.


They key to a perfect grilled cheese is the type of cheese you use. Run of the mill american cheese is fine, but that will just create a fine grilled cheese lacking any depth of flavor. I use a combination of creamy Havarti and nutty Gruyere. This combo is a match made in heaven! The two cheeses perfectly balance one another, especially once combined with salty bacon! I always buy a block of cheese and shred it at home, I recommend shredding your cheese for nice even coverage. This also will allow the two cheeses to really mix together.


This grilled cheese is the perfect comfort food for a night in or a great addition to game night with friends! It is so easy and delicious. Enjoy!


 

Chipotle Bacon Grilled Cheese

Prep Time: 15 Minutes

Cook Time: 8 Minutes

Yields: 2 Sandwiches


Ingredients


  • 4 Slices of Tuscan White Bread (from the grocery store bakery)

  • 1/4 cup Real Mayonnaise

  • 2 tbsp Chipotle Paste

  • 1/2 cup Shredded Gruyere

  • 1/2 cup Shredded Creamy Havarti

  • 4 Slices of Thick Cut Bacon

  • 2 tbsp of Butter (softened)

Instructions


Line a sheet tray with parchment paper and place the bacon on the tray. Preheat the oven to 425 degrees and place the bacon in the oven while it preheats, this will render more of the fat from the bacon. Cook for 15-18 minutes until crispy.


While the bacon is cooking prepare your sandwich. Mix together mayonnaise and chipotle paste, taste. If you would like more spice add more chipotle paste. Then mix together the shredded Gruyere and Havarti in a separate bowl.


Remove bacon from the oven and place on a paper towel lined plate. Once the bacon is cool enough to handle, chop into 1-inch pieces. This will make the sandwich easier to eat.


Now begin assembling your sandwich. Slather one side of all four pieces of bread with the chipotle mayo. Then divide your cheese between two slices of bread. Don't be afraid to pile it high! Next, put your bacon on top of the cheese and cap the sandwich with another piece of bread, chipotle side down.


Preheat a large skillet on medium high heat, make sure your wait until the pan is hot to place the sandwich in! Before cooking your sandwich, butter the outsides of the bread generously.


Place the sandwich in the pan and then place another pan on top of the sandwich to weigh it down. This will help make the bread nice and crispy! A cast iron pan is best because it is heavy, but you can also use a normal skillet and press down on it.


Cook for 4 minutes, flip and cook for an additional 4 minutes until sandwich is golden brown and cheese is melted.
