Whoever said salads have to be boring is most certainly wrong and this salad proves it! A mixture of crispy chicken, bacon, avocado and a Lemon Herb Dressing make this salad exciting and delicious.
Back when bars were open, my friends and I spent every Tuesday doing trivia at a local brewery. One of our favorite food trucks had a California chicken wrap and I missed it so much I decided to model this salad after it!

California Chicken Salad
Prep Time: 15 Minutes
Cook Time: 30 Minutes
Yield: 4 Servings
Ingredients
For the Baked Crispy Chicken:
1 lb Chicken Breast Tenders (Or Chicken Breast Sliced Into Strips)
1/2 cup Flour
1 tsp Paprika
1 tsp Garlic Powder
Salt & Pepper to Taste
1 Egg
1 cup Italian Breadcrumbs
1/4 cup Parmesan Cheese
For the Salad:
6 Strips of Thick Cut Bacon Diced (cooked per instructions)
1 Avocado Sliced Thin
1/4 cup Feta Diced
1 Tomato Diced
1 head of Bibb Lettuce Chopped(or lettuce of your choosing)
For the Dressing:
1/2 cup Hot Honey (or regular honey)
1 clove Garlic Minced
1 Lemon Juiced
Salt & Pepper to Taste
2 tbsp Fresh Parsley Chopped
2 tbsp Fresh Chives Chopped
2 tbsp Fresh Thyme Chopped
Instructions
Preheat oven to 425.
For the Chicken: mix together flour, paprika, garlic powder, salt & pepper on a plate. On another plate beat egg until thoroughly mixed and season with salt & pepper. On a third plate mix together breadcrumbs and parmesan cheese. Line a sheet pan with parchment paper.
Dredge the chicken: coat both sides with flour mixture, make sure to pat excess flour off. Then coat with egg and finally breadcrumbs. Place on sheet pan and repeat process until all chicken strips are thoroughly coated.
Bake for 10 minutes then flip chicken and bake for an additional 10 minutes.
Remove from oven, dice and add to the salad.
For the Dressing: In a small bowl whisk together all ingredients until emulsified.
For the Salad: mix together bacon, avocado, feta, tomato, lettuce, crispy chicken and toss with dressing, add dressing a little bit at a time until dressed to your liking.

Cooks Note:
You can use dried herbs if you do not have fresh on hand.
